For my son, it was My First Paint with Water Pads from Melissa and Doug. It's a book where colors appear to create a picture as they are brushed with water -- and my little boy is hooked. He really thinks he's Picasso painting away.

It's small enough to easily fit in the diaper bag, but doesn't contain any small parts that are going to get lost in the mashed potatoes. For us, a good water paint book (some come with water pens rather than brushes) can always do the trick.
